做(zuò )法:春笋切成(chéng )片后加少(shǎo )许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒(chǎo )均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上锅盖(gài )大(dà )火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖焖(mèn )。
