做法:洗净(jìng )宰好(hǎo )鲫鱼,洗净淮山和薏(yì )米。用(yòng )清水把陈(chén )皮泡(pào )软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦一(yī )遍,放(fàng )两勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材(cái )料,武火煮(zhǔ )沸,转中(zhōng )小(xiǎo )火煲一个半小时,下盐调(diào )味即可品尝。
