做(zuò )法:春笋切(qiē )成片后(hòu )加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱(cōng )切(qiē )成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖(gài )上(shàng )锅盖大火煮(zhǔ )开后转中火。煮(zhǔ )到水快熬干的时候加入盐(yán ),翻炒(chǎo )均匀稍收汁时(shí )盖上锅盖焖。
