做法:春(chūn )笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜、春(chūn )笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋,盖上锅(guō )盖大火(huǒ )煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
