做法:洗净宰好(hǎo )鲫(jì )鱼(yú ),洗净淮山(shān )和薏米。用(yòng )清(qīng )水把陈皮泡(pào )软(ruǎn ),拍裂一小块姜,热锅,用姜块(kuài )在锅上擦一遍,放两勺油,待油六成热下(xià )鱼,煎(jiān )至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮好的鲫鱼和(hé )其他(tā )材料,武火煮沸,转中小火煲(bāo )一(yī )个半小时(shí ),下盐调味(wèi )即可品尝。
