做法:春笋切成(chéng )片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量(liàng )清水半掩住春笋,盖上锅盖(gài )大火煮(zhǔ )开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时(shí )盖上锅盖焖(mèn )。
