做法:春笋切成片(piàn )后(hòu )加少许盐捞出后(hòu )用清水浸泡,生姜切片,葱切成(chéng )段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春(chūn )笋(sǔn )、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮到(dào )水快熬(áo )干的时候(hòu )加入盐,翻(fān )炒均匀(yún )稍收汁(zhī )时盖上锅盖(gài )焖。
