做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再(zài )加入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水半掩住春笋,盖上锅(guō )盖(gài )大火煮开后转中火。煮到水快(kuài )熬干的时候(hòu )加入盐,翻(fān )炒均匀稍收汁时盖上锅(guō )盖焖。
