做法:春笋切成片后加少(shǎo )许盐捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到(dào )水(shuǐ )快(kuài )熬干的时候加入盐(yán ),翻(fān )炒均匀稍收汁时盖上锅盖焖。
