做法:春笋切成片(piàn )后加少许(xǔ )盐(yán )捞(lāo )出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐(yán ),翻炒均匀稍收(shōu )汁时(shí )盖上(shàng )锅盖焖。
