做(zuò )法(fǎ ):春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入(rù )生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬(áo )干(gàn )的时候加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖上锅盖焖。
