做法:洗净宰好鲫鱼(yú ),洗净(jìng )淮山(shān )和薏(yì )米。用清水把陈皮(pí )泡软,拍裂一小块姜,热(rè )锅,用(yòng )姜块(kuài )在锅(guō )上擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和(hé )其(qí )他(tā )材料,武火煮沸,转中(zhōng )小火煲一个半(bàn )小时(shí ),下(xià )盐调味即可品尝。
