做法(fǎ ):春笋切成(chéng )片后加(jiā )少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入(rù )生姜、春笋(sǔn )、牛肉片(piàn )、葱(cōng )段翻炒1分钟左(zuǒ )右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大(dà )火煮开后转中火(huǒ )。煮到水快熬干的时候(hòu )加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上(shàng )锅盖焖。
