做法:春笋切成片后(hòu )加少(shǎo )许盐(yán )捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放(fàng )入(rù )生姜、春(chūn )笋、牛(niú )肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春(chūn )笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
