做法:春笋切(qiē )成片(piàn )后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清(qīng )水半掩住春(chūn )笋,盖(gài )上(shàng )锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍(shāo )收汁时盖上锅(guō )盖焖。
