做(zuò )法:洗净(jìng )宰好鲫鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软,拍裂一(yī )小块姜(jiāng ),热(rè )锅,用姜块在锅上擦一遍,放两勺油,待(dài )油六成(chéng )热下鱼,煎(jiān )至微黄。煮沸瓦(wǎ )煲里(lǐ )的清水,放(fàng )入煎煮好的鲫(jì )鱼和其他材料,武(wǔ )火煮沸,转中小火煲一个半小时(shí ),下盐(yán )调味即可品尝(cháng )。
