做法(fǎ ):春笋切(qiē )成片后加少许盐捞(lāo )出后用(yòng )清水浸泡,生(shēng )姜(jiāng )切片,葱切成段(duàn )。锅烧(shāo )热(rè ),倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀(yún ),加入少量清水半掩住春笋,盖上锅盖大(dà )火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
