做(zuò )法:洗净宰好鲫(jì )鱼,洗净淮(huái )山和薏(yì )米。用清水把陈皮泡(pào )软,拍裂一(yī )小块姜,热锅(guō ),用姜块在锅上(shàng )擦一(yī )遍,放两勺油(yóu ),待油六成热下鱼,煎至微(wēi )黄(huáng )。煮沸瓦煲里的清(qīng )水,放入煎煮(zhǔ )好(hǎo )的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小时,下盐调味即可品尝(cháng )。
