做法:洗(xǐ )净宰好鲫鱼,洗(xǐ )净淮山和(hé )薏米。用清水把陈皮(pí )泡软,拍裂一小(xiǎo )块姜,热(rè )锅(guō ),用姜块在锅上擦(cā )一遍,放两勺油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清水(shuǐ ),放入(rù )煎煮好的鲫鱼和其他材料,武(wǔ )火煮沸,转中小火煲一个半小(xiǎo )时(shí ),下盐(yán )调味即可(kě )品(pǐn )尝。
