做法:洗净宰好鲫鱼,洗净淮(huái )山和薏米。用清水把陈皮泡软(ruǎn ),拍裂一(yī )小块姜(jiāng ),热锅(guō ),用(yòng )姜(jiāng )块在锅上(shàng )擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水(shuǐ ),放入煎煮好的(de )鲫鱼和其他(tā )材料(liào ),武火(huǒ )煮(zhǔ )沸,转中(zhōng )小火煲一个半小时,下盐(yán )调味即可品尝。
