做法(fǎ ):春笋切成片(piàn )后加少许盐捞(lāo )出后用清(qīng )水浸(jìn )泡,生姜(jiāng )切片,葱(cōng )切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮(zhǔ )到水快熬(áo )干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
