做法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽(chōu )、蚝油翻(fān )炒(chǎo )均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖(gài )大火煮(zhǔ )开后(hòu )转(zhuǎn )中(zhōng )火。煮到水快熬干的时候加入盐(yán ),翻炒(chǎo )均匀(yún )稍收汁时盖上锅(guō )盖焖。
