做(zuò )法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片(piàn ),葱切成段(duàn )。锅烧(shāo )热(rè ),倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的(de )时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖(mèn )。
