做(zuò )法(fǎ ):春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加入(rù )少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大(dà )火煮开(kāi )后转中火(huǒ )。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
