做法:洗(xǐ )净宰好鲫(jì )鱼,洗净淮山和薏(yì )米。用清水(shuǐ )把陈皮泡(pào )软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦一遍,放两勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材(cái )料,武火煮(zhǔ )沸,转中小火(huǒ )煲一个(gè )半(bàn )小(xiǎo )时,下盐调味(wèi )即可品尝。
