做法:春笋切成(chéng )片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入(rù )生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
