做法:春笋切成片后加少许盐捞(lāo )出后用清水浸(jìn )泡,生姜切(qiē )片(piàn ),葱切成段。锅烧(shāo )热(rè ),倒入(rù )2勺油,放(fàng )入生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
