做法:洗净宰好鲫鱼,洗净淮(huái )山和薏米(mǐ )。用清(qīng )水把陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅上(shàng )擦一遍(biàn ),放(fàng )两勺油,待油六成热下(xià )鱼,煎至(zhì )微(wēi )黄。煮沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和其他(tā )材(cái )料,武火煮沸,转(zhuǎn )中小火煲一(yī )个半小时,下盐调(diào )味即可品尝(cháng )。
