做法:春笋切(qiē )成片后加少许盐捞出后用(yòng )清(qīng )水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生(shēng )姜(jiāng )、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮(zhǔ )到水(shuǐ )快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
