做法:春笋(sǔn )切成片后加少(shǎo )许盐捞出后(hòu )用清水浸(jìn )泡,生姜切(qiē )片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
