做(zuò )法:春笋切成片后加(jiā )少(shǎo )许盐捞出后用清水浸(jìn )泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺(sháo )油(yóu ),放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮开(kāi )后转中火。煮到(dào )水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
