做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水(shuǐ )把陈皮泡软,拍裂一小(xiǎo )块姜,热(rè )锅,用姜块在(zài )锅(guō )上擦一遍,放两勺油,待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里(lǐ )的清(qīng )水,放入煎(jiān )煮好的鲫鱼和(hé )其他材料,武火(huǒ )煮沸,转中小(xiǎo )火(huǒ )煲一个半小时(shí ),下盐调味(wèi )即可品尝。
