做法:春笋切成片(piàn )后(hòu )加少(shǎo )许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜(jiāng )、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少量清水半掩住(zhù )春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖上锅(guō )盖(gài )焖。
