做法:春笋切成片(piàn )后加少许盐捞(lāo )出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽(chōu )、蚝油翻(fān )炒均匀,加入少量清水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火(huǒ )。煮到水快熬干的时候加(jiā )入盐,翻炒均(jun1 )匀稍(shāo )收汁时(shí )盖上(shàng )锅盖(gài )焖。
