做法:洗净宰好鲫(jì )鱼,洗净淮山和薏(yì )米。用(yòng )清水把(bǎ )陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上(shàng )擦一遍,放两勺(sháo )油,待油六(liù )成热下(xià )鱼,煎至(zhì )微黄。煮沸瓦煲里(lǐ )的清(qīng )水,放(fàng )入煎煮好的鲫鱼和(hé )其他材料,武火煮沸,转(zhuǎn )中小火煲一个半小时(shí ),下盐调味即可品尝。
