做(zuò )法:春笋切成片后加(jiā )少许盐(yán )捞出后用清水浸(jìn )泡,生姜切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽(chōu )、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩(yǎn )住春笋,盖上锅盖大火(huǒ )煮(zhǔ )开后(hòu )转(zhuǎn )中火。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
