做法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏米。用清水把陈(chén )皮(pí )泡(pào )软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦(cā )一遍(biàn ),放两勺油(yóu ),待油六成热(rè )下鱼,煎至微(wēi )黄(huáng )。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和其(qí )他(tā )材料,武火煮(zhǔ )沸,转中小火煲一个半小时,下盐(yán )调味即可品尝。
