做(zuò )法:春笋(sǔn )切成片后加少许盐捞(lāo )出后用(yòng )清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生(shēng )抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
