做法:春笋切成片后(hòu )加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入(rù )生姜(jiāng )、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水(shuǐ )半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖(gài )上锅盖焖。
