做法:春笋切成片(piàn )后加少许盐捞出(chū )后(hòu )用清水浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖(gài )上锅盖大火煮(zhǔ )开后(hòu )转中(zhōng )火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍(shāo )收汁时盖上锅盖(gài )焖。
