做法:春笋切成片后加少许盐捞出后(hòu )用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖(gài )大火煮开后转中(zhōng )火。煮(zhǔ )到水(shuǐ )快熬(áo )干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上(shàng )锅(guō )盖焖(mèn )。
