做(zuò )法:春笋(sǔn )切成片后加少许盐捞出(chū )后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入(rù )生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒(chǎo )均匀,加入(rù )少(shǎo )量清水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水(shuǐ )快熬(áo )干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
